Mandolin Creek Farm offers a variety of fresh and fertile eggs to Village customers.

Chicken Eggs

Mandolin Creek Farm has fresh brown eggs available from our flock of Barred Plymouth Rock hens, which have the run of our entire farm. Researchers found that eggs from pastured hens have higher levels of Omega-3 fatty acids and vitamins A and E. Free range chickens also create a symbiotic relationship between the animals and the land.

Duck Eggs

Mandolin Creek Farm has a limited number of culinary duck eggs available. Duck eggs stay fresher longer, due to their thicker shell. They have a richer flavor and contain more albumen, so they make cakes and other pastries fluffier. Duck eggs also contain more Omega-3 fatty acids. Finally, individuals with allergies to chicken eggs can can often eat duck eggs.

Turkey Eggs

Mandolin Creek Farm occasionally has turkey eggs available for eating or incubation.
